Nutella Peanut-butter Cookies

It’s October! And now that I don’t live in Southern California I get to experience a more universal autumn. It’s actually pretty nice, the weather chills, the leaves get all pretty and colorful and (the best part) humidity drops. Back in SoCal, as far back as I can remember, September and October have always been the hottest months. I remember dreading going back to school because the first few months were always super hot, and Halloween was always a warm night. TV shows and movies always showed people in jackets, gloves and beanies on halloween night and it always confused me. Then I grew up and realized that Southern California is an exception. And you know what, oddly enough, I miss it. I miss my hometown, as much of a warm, suburban cookie cutter as it is, I miss it.

But, now I am here in the great New York City, and I love it. It’s seasonal and that really prepares you for the holidays. All I want is pumpkin flavored everything, peppermint candy and even soup and I don’t like soup. I went to make some Chocolate Gingerbread Cookies but it called for two ingredients I didn’t have so I settled for some Nutella Peanut-butter Cookies. I took the recipe for Peanut Butter Chocolate Cookies from The Ghirardelli Chocolate Cookbook and altered it. Nutella instead of peanut-butter and peanut-butter chips instead of chocolate. Turned out pretty good, really moist.

Altered Ingredients:

1 stick unsalted butter

1/2 cup Nutella

1/2 brown sugar

1/4 granulated white sugar

1 large egg

1 tablespoon whole milk

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

peanut-butter chips

Mix in the butter, Nutella, brown sugar, white sugar, egg, milk and vanilla. Then mix in the flour, baking soda and salt mixture. Then the chips… place on cookie sheets in a preheated oven (350deg) for 9-11 min.

Ok, ok..OK! I know, I know. It’s been a while. No worries though, I am back. At first it was Ramathan and it was draining me from of energy and life. Simply not being able to snack during the day really made me into a useless couch potato, and that laziness stuck with me even after Ramathan ended. Ramathan was the hardest it’s ever been for me this year, the super long days combined with the sticky hot NYC weather … just to get up in the mornings was a lot of work. The Husband was such a trooper throughout the whole month, his sanity kept me slightly less insane…kudos to him!

Once Ramathan was over we were busy preparing to move, then we moved. Then we found ourselves helping my brother move two states over. Then we had a house guest, then family crashing with us. Long story short, I have a lot of excuses but deep down I know I could have updated amongst all of that and for that I am sorry. I’m back though! So let the adventures continue!

I’ve had this link sitting in my tabs for a while, every time I go to do it I pull back simply because I feel this is something that would be more fun if I do with with someone. So until I plan a candy making date this recipe is being archived.

Nutella Lava Cookies

I love Nutella. It’s like chocolate and peanut-butter got together and gave birth to a heavenly and beautiful hazelnut spread. How can anyone dislike Nutella? If not love, you have to at least like the stuff. It’s a perfect sweet accent for pancakes, toast, french toast, bananas, milkshakes, your spoon, fingers… it’s all good, no judgements here on how you eat the stuff!

Cookies are also a way to eat Nutella. Like if you were to make cookie dough and stuff it with some Nutella before putting it in the oven. Then when you take it out eating it while it’s still warm and let the Nutella ooz into your mouth. Maybe some ice-cream on the side. Yum. I can’t wait till we have dessert tonight.

Nutella stuffed cookies, or Nutella Lava Cookies, was my project for today. I had made them once before at a friends house and I woke up this morning wanting some. It turned out a little different today, I forgot to put chocolate chips into my cookies and I didn’t use ready made coco power, instead I ground up half a chocolate bar. The two together might be why my cookies turned out so light, still they taste pretty good. They aren’t too sweet making it perfect to have with some tea, milk or ice-cream.
